If you’re after a comforting dinner that doesn’t feel overly heavy, this smoky chicken and orzo dish delivers big flavour without the need for cream.
Juicy chicken thighs, crispy pancetta, and sweet roasted tomatoes come together with a splash of white wine and the deep warmth of smoked paprika to create a glossy, flavour-packed sauce.
Ingredients (Serves 2–3)
- 4 chicken thighs (skinless or skin-on)
- 100g pancetta, diced
- 200g orzo
- 250g cherry tomatoes
- 1 small onion or shallot, finely chopped
- 3 cloves garlic, minced
- 500ml chicken stock
- 100ml dry white wine
- 30–40g parmesan, grated
- 1–2 tsp smoked paprika
- Zest of 1 lemon + a squeeze of juice
- Olive oil
- Salt & black pepper
- Fresh parsley or basil (optional)
Method
1. Crisp the pancetta

Heat a large pan over medium heat and cook the pancetta until golden and crisp. Remove with a slotted spoon and set aside, leaving the fat in the pan.
2. Sear the chicken
Season the chicken with salt, pepper, and smoked paprika. (Optional but if you can, marinate the chicken in these with olive oil for 60 mins prior to cooking).
Sear in the pancetta fat for 2–3 minutes per side until lightly golden, then remove and set aside.
3. Build the flavour base
Lower the heat slightly and add the shallots. Cook until softened, then add the garlic.
Remove from the heat and stir in a little more smoked paprika and cook for 30 seconds to release its full aroma.
4. Deglaze with white wine
Pour in the white wine and let it bubble for 1–2 minutes, scraping up any bits from the pan.
5. Toast the orzo

Add the orzo and stir for a minute or two so it lightly toasts and absorbs flavour.
6. Simmer

Add the chicken stock and cherry tomatoes, then return the chicken to the pan.
Simmer gently for 10–15 minutes, stirring occasionally, until the orzo is tender and the chicken is cooked through.
7. Finish
Remove from the heat and stir through:
- Grated parmesan
- A drizzle of olive oil (or a small knob of butter)
- Lemon zest and a squeeze of juice
8. Serve
Top with crispy pancetta, fresh herbs, and an extra grating of parmesan.
Serve straight from the pan or plate up for a more refined finish.
