A Dining Room Inspired by the Lake District
The newly redesigned SOURCE dining room strikes that elusive balance between luxury and comfort.

Split across two spaces, the interiors lean into dark tonal panelling, contrasted with rich burnt-orange velvet curtains that add warmth and depth. Statement lighting and contemporary artwork—commissioned specifically for the restaurant—bring personality without overpowering the space.
The result? A feeling of “quiet luxury.” It’s intimate, immersive, and effortlessly stylish, yet still relaxed enough to make you feel completely at ease.
There’s also a strong connection to the surrounding landscape. Subtle design details—like stag and pheasant figures—nod to the local countryside and the ingredients that often feature on the menu, while shelves display a mix of carefully curated objects and awards that tell the story of SOURCE’s journey.
Sustainability, Craftsmanship and Attention to Detail
What stands out most about the refurbishment is how intentional everything feels.
From bespoke furniture crafted in Lancashire to upholstery made using Herdwick wool sourced locally in Cumbria, there’s a clear commitment to sustainability and provenance—values that mirror the kitchen’s approach to ingredients.

Even the finer details have been carefully considered. British deer leather accessories, handcrafted tableware, and materials designed to age beautifully over time all contribute to a dining room that feels both contemporary and deeply rooted in its surroundings.

The Food: Precision, Creativity and Bold Flavour
Of course, design alone doesn’t earn or retain a Michelin star—the food has to deliver. And at SOURCE, it absolutely does.
The menu champions British produce, presented in a way that’s playful, technically accomplished, and packed with flavour.

My meal began with a beautifully executed chicken liver parfait, paired with bilberry, ajo blanco and a delicate buckwheat sablé. It was rich yet balanced, with the acidity and texture cutting through perfectly.
Next came a standout venison tartlet, where celeriac, juniper and yuzu worked together to bring both depth and brightness—an elegant take on game that felt modern and refined.

The highlight of the meal, however, was the glazed veal sweetbread. Served alongside almond, duck liver, sesame, kombu and saffron rice, it was a dish that showcased real technical skill. Deep, savoury, umami-led flavours layered beautifully, yet never felt heavy. It’s the kind of plate that lingers in your memory long after the meal.

A perfectly cooked Cornish sea bass followed, accompanied by a sand carrot bouillabaisse. The fish was delicate and flaky—melt-in-the-mouth—while the broth added depth without overwhelming the natural flavour of the seafood.

To finish, the Yorkshire rhubarb dessert with saffron and pink pepper delivered both visually and on the palate. Bright, vibrant and beautifully balanced, it brought together sweetness, acidity and gentle spice in a way that felt both refreshing and indulgent.
