As the weather starts to warm up, I tend to move away from heavier, thicker soups and look for something a bit lighter — but still full of flavour.

This spiced carrot and ginger soup is exactly that. It keeps the smooth, comforting texture of a classic blended soup but swaps richness for freshness. Ginger brings a gentle warmth, while cumin, coriander and turmeric add depth without making it feel heavy. A squeeze of lemon at the end lifts everything and keeps the whole bowl feeling bright and balanced.

Ingredients (Serves 4)
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 500g carrots, peeled and chopped
- 1 small potato, chopped
- 1 litre low-salt vegetable stock
Spice blend
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp turmeric
- ¼ tsp chilli flakes (adjust to taste)
- ¼ tsp ground fenugreek (optional)
- Black pepper
To finish
- Juice of ½ lemon
- Optional: fresh coriander
Method
1. Build the base
Heat olive oil in a large saucepan over medium heat.
Add the onion and cook gently for 5–6 minutes until softened.
Stir in the garlic and grated ginger and cook for another minute.
2. Add the spices
Add cumin, coriander, turmeric, chilli flakes and fenugreek.
Cook for 1 minute, allowing the spices to toast and release their aroma.
3. Simmer
Add the carrots, potato and vegetable stock.
Bring to a gentle simmer and cook for 20–25 minutes until the vegetables are soft.
4. Blend until smooth
Blend thoroughly using a stick blender until completely silky.
If needed, add a splash of hot water or extra stock to loosen.
5. Finish
Stir through lemon juice and season with black pepper.
Serve hot, topped with fresh coriander if desired.
